just put a parts list together that are available to me here in Norway. is this overkill for the iRacing requirements or will it give me a decent pc that has an easy time running games.

Looking good. Although I would save up for a bit, at least $1500 USD to get a more powerful dedicated GPU in there and switch to a normal CPU instead of an APU.
