The flexibility of pc allows that people choose their parts based on their budget and need. Most likely he needs more processing power at the moment and will upgrade the gpu later.

Why the 16 Gigs of Ram and Ryzen 7 if you're only running a 1050ti?

My guess is because he either doesn't need too much graphical power for the games he plays, or he plans to upgrade the GPU later

How is the airflow in the evolv itx ? I am debating on this case or the meshify mini c for my next itx build. I'm not really looking for AIO, so good airflow from front panel is key.

Its pretty decent considering it's only got 3 smallish cut outs for air on the front panel

How did you find routing the power cables? I've just placed my order for same board and case. I'm a few months away from finishing mine. I wish they make a white case with the red internals like this
